Fabulous Cheese Cake

Ingredients:

10 graham cracker biscuits (crumbed)
2 TBS sugar
1 tsp ground ginger
1/2 lb butter, melted

Combine crumbs, sugar, ginger and melted butter. Press along sides of springform baking tin and cool in fridge for 15 minutes * or use ready pie crusts either 1 large or 18 individual

Filling:

3 8oz packets Philadelphia cream cheese * I use 1 reduced fat and 2 regular
4 eggs
1 tsp vanilla
1 cup sugar

Directions:

Beat cheese until light. Add eggs, vanilla and sugar and continue beating until light and creamy. Spoon into crust. Bake at 375 (about 35 min for large and 20 min for small). The filling will still appear soft but will harden in the fridge.
